In the last decade we renewed our vineyards while we continued to grow the grape variety Gaglioppo, bush trained on a hilly land. As before, we bare the roots with a tool named aratro, manually and fertilize the land with the field bean manure. In order to maintain the plants health we use sulfur-copper powder.

The grape harvest is done manually using crates. We do not use selected yeasts or fermentation activators and use a reduced amount of sulfites.
